Beetroot Unearthed

The veggie patch has been lovingly tended, watered and fed since July and we have just been able to enjoy the first fruits (well vegetables to be more precise) of our labours.


We dug up our first beetroot this week, it smelt delicious and looked superb, the stems were bright pink with tonnes of deep green leaves that looked like spinach.


In celebration of our first veggie, we decided to roast up the beetroot with a splash of caramelised balsamic vinegar and olive oil and ate it with herb roast chicken, potatoes and asparagus. It was one of the tastiest meals, we've cooked and I think a big part was we played a part in growing the produce.
